Lapati is the project of two Frenchmen, Vincent Jullien and Guillaume Gouerou, who met at an artists' residency in Georgia and stayed to make wine in Sagarejo, in the eastern region of Kakheti. Amber (or orange) wine is Georgia's ancient signature: white grapes fermented on their skins in qvevri, egg-shaped clay vessels buried in the ground, which gives the wine color, tannin and savor. Where the tradition often calls for six months on the skins, this Mtsvane sees only about ten days before pressing, then goes to qvevri to finish — so you get the amber tint and the grip without the heavy tannin. It's bottled unfiltered with a trace of sulfur, and it drinks fresh and linear rather than chewy.
