Rkatsiteli, Georgia's most-planted white grape, ferments and rests with its skins in qvevri, the egg-shaped clay vessels buried to the neck in the cellar floor, and comes out with tannin, structure and a deep amber cast. Lapati is run by Vincent Jullien and Guillaume Gouerou, two Frenchmen who met at an art residency in Georgia and stayed to make wine in Sagarejo; they use sulfur mostly to sanitize the qvevri and barely any in the wine itself. What's striking is that all that skin time produces something linear and stony rather than heavy.
