Lapati is the work of Vincent Jullien and Guillaume Gouerou, two Frenchmen who met at an art residency in Georgia and stayed to make wine in the village of Sagarejo, blending Georgian qvevri tradition with a French pét-nat instinct. It came in at 12% alcohol, bone dry at about a gram of residual sugar, with total sulfur down at 8 mg per liter, and only 2,000 bottles were made.
