Tiny, concentrated clusters were hand-picked at night on September 20th and sent whole-cluster to press; the free run settled 24 hours and went into French and Austrian oak puncheons, 30% new, for a cool native ferment and spontaneous malolactic. Eleven months on the lees with monthly stirring, then bottled unfined and lightly filtered.
