It comes from the Phoenix Vineyard, a steep, east-facing hillside above the winery. The vines went in in 1982 as old heritage field selections of Cabernet Sauvignon, Cabernet Franc and Merlot, and they grow on an undisturbed ridge of ancient marine shale. The slope is steep and the rows are narrow, so nearly everything is done by hand (even the compost goes out by shovel and wheelbarrow, a job that takes two weeks on its own). The fruit is picked vine by vine over several passes and fermented with native yeast. It's pressed at dryness to keep it fresh, then aged for 20 months, starting in about 20% new French oak before moving to large foudres. Only 444 cases were made.
