West Oak Knoll has been one of Napa's classic Chardonnay spots since the 1960s, when it was thought too cool for full-bodied reds. Cool winds and marine-origin clay soils hold onto the acidity while the Napa sun brings ripeness. The Matthiassons don't leave that balance to chance. They pick on eight different dates. Native-yeast fermentation, aging on the lees in seasoned French barrels with no racking, and malolactic in only a third of the barrels give it a creamy texture without blurring the edges.
