Telmo Rodríguez calls Zeta the friendliest, most delicate and most approachable of his Sierra de Gredos wines, and it's made from organically farmed bush vines more than 60 years old. The fruit comes from three Cebreros sites, El Robledillo, El Mojón and El Presidente, which sit between 890 and 920 metres. Their soils are shallow, coarse, fast-draining slate and granite over magmatic rock, and Zeta blends fruit from both to play fruit off against structure. Old vines like these fit the mission Rodríguez and Pablo Eguzkiza have followed since 1994: bringing Spain's old, forgotten vineyards back to life. Pegaso, which they founded in 1999, helped launch the careers of many of the best-known names in Gredos. The story goes back to a young Telmo and his father walking the shepherds' trails of central Spain in search of forgotten landscapes. The winemaking is hands-off: spontaneous fermentation with native yeasts in barrel. More than one taster has called Cebreros wines \"mountain Nebbiolo,\" and this village bottling is an easy, honest way to see why.
