Pere Ventura works out of Sant Sadurni d'Anoia, the town at the centre of Cava production, and holds its vintage bottling back far past the thirty months the Gran Reserva tier legally requires: this one went into bottle in March 2018 and stayed on its lees until well into the 2020s. It is 60% Xarel-lo, the Penedes grape that gives Cava its herbal, faintly bitter backbone, and 40% Chardonnay for flesh and citrus, finished at Brut level with low dosage. That long lees ageing is what shifts it out of everyday-fizz territory and into pastry and toasted nut.
