Inseparable is the work of Edy Del Popolo and David Bonomi, two winemakers who were close friends long before they were partners, which is where the name comes from, and who left senior jobs at large Mendoza houses to farm two small hectares at the old Monasterio vineyard in the Uco Valley. The 2022 growing season was a nervous one, with late spring frosts, February rain and an unusually early frost on March 30, but the fruit came in clean at the end of the month. Everything is destemmed and fermented cool in 3,000-liter concrete vats, then held twelve months in that same concrete and bottled without fining or filtration.
