Pieropan has been making Classico Soave for over a century - Dr. Pieropan gave up his medical practice in 1901 for the vines - and in the 1970s the family became the first in Soave to bottle single vineyards. The straight Soave Classico comes off certified organic hillside sites between 100 and 300 metres on volcanic and calcareous soil, Garganega with 10 to 15% Trebbiano di Soave, fermented cool in glass-lined concrete and left on its fine lees for five to nine months, with no oak involved at any point. 2025 was a wet, awkward season in the Veneto that treated white grapes better than red and produced a vintage built for drinking rather than for power.
