These are not wines you drink on a hot summer evening—if you're lucky enough to drink them at all.But they teamed up to make the perfect wine for hot summer evenings—or hot summer days—a fresh and classically pale pink Provençal Rosé. This is exactly the kind of wine that has made Provençal Rosé the benchmark.Of course, de Villaine and Seysses didn't team up just to make a cookie cutter rosé. Not at all. Back in the ‘80s, they wanted to prove that they could make great wine in the South of France. They found an estate with great exposures, complex soils (a mix of clay and limestone that, in some places, reminded them of Burgundy) and enough elevation to ensure cool evenings to preserve acidity in grapes and wine. And they bought it.The wonder-team converted the vineyards to organic farming (they're certified) and invested in new facilities. They started growing cover crops between the rows to improve the quality of the topsoil and reduced yields, and the wines blossomed. Today they make an elegant Viognier and a vibrant Provençal red.
