Les Pierrières was the first wine Olivier Collin vinified, beginning with the 2004 harvest, after his father had rented the family's vines out to a big Champagne brand in 1987. It comes from a 1.2-hectare monopole in Vert-Toulon, the village next to the family's home of Congy. There, 10 to 50 centimetres of poor topsoil sit over soft Campanian chalk laced with black flint, a combination that's rare in Champagne and found specifically in the Coteaux du Petit Morin. Collin farms three neighbouring Chardonnay parcels here and vinifies each one separately, and his estate is the only one in Champagne that releases nothing but single-vineyard wines. He's in no hurry, either. Since the 2015 base, Pierrières has spent 48 months ageing before disgorgement, and dosage stays very low (this is an Extra Brut) because Collin sees it as a tool for balance and ageing, not sweetness.
