Valentin usually makes a separate wine from each grape variety in Trouillots, so this bottling gives you that one slope through Trousseau alone. The farming is certified organic and then some: radishes, beans and other cover crops grow between the rows and get rolled down each year instead of plowed under. Valentin sees manual work on the land as a political act, but you don't need to share his politics to enjoy what it produces.
