Federspiel is the middle of the Wachau's three categories — 11.5 to 12.5% alcohol, named after the falconer's lure — which keeps the wine lean and pointed where a Smaragd would be broader. Jäger is the fifth generation here, working nine hectares with native-yeast fermentations, this one in stainless steel with no oak at all.
