Roman Jäger, fifth generation at this family estate, farms a piece of it and treats it plainly: native yeasts, long cool fermentation in stainless steel, no oak, nothing to get between the rock and the glass. Smaragd is the ripest of the Wachau's three categories, above 12.5% alcohol, named for the emerald green lizards that sun themselves on the terrace walls — it means concentration and depth, not sweetness, and these wines are dry. Jäger makes only around 50,000 bottles a year across nine hectares, so there is never much of this.
