It’s a mix that is imbued in the wine’s name, for the 2020 Phileas is a homage to the adventurous spirit of Phileas Fogg. Fogg is Jules Verne's iconic character who traversed the globe in eighty days. He was an explorer, he was a conqueror of nature, and he was also a lover of nature.

As wine-makers, the Domaine Les Trois Toits are much the same. They explore their diverse and complex terroirs. They embrace the philosophy of minimal intervention, allowing the natural character of the Melon de Bourgogne grape to shine forth. But they also use innovation to guide the grapes and ensure that they can, in fact, give us their full expression.

Fermented with indigenous yeasts, aged on lees in underground vats – for up to 18 months! – and then bottled with only a smidgeon of sulfur, this wine is natural, traditional and innovative all at once. There is crisp minerality and a lovely, delicate salinity, a gentle nod to the nearby Atlantic breeze that caresses the vineyards.
