Cabernet Sauvignon, aka "Cab Sauv," may be the world's favorite grape. It makes some of the world's greatest wines: Napa Cabernet and Bordeaux, of course, but it's also a superstar in countries from Argentina to Australia.
Cabernet Sauvignon wines are dry red wines, with lots of flavor and a full body. Traditionally, especially in Bordeaux, Cab-based wines have cassis flavors, as well as blackberry, herbs and mineral notes, as well as lots of tannin and acidity. But when grown in warmer regions or made to be riper, they can be more generous, with smoother structure and accessible fruit.
