Traditionally, especially in Bordeaux, Cab-based wines have cassis flavors, as well as blackberry, herbs and mineral notes, as well as lots of tannin and acidity. But when grown in warmer regions or made to be riper, they can be more generous, with smoother structure and accessible fruit.
