Cabernet Sauvignon is one of Bordeaux three great grapes, and the leading grape of the famous "Left Bank" Chateaux of the Medoc. It can make a more challenging wine in Bordeaux than it does, for instance, in Napa; fruit flavors are a little less lush, the acids a little higher and, when young, the tannins grippier.
But the payoff is concentration, complex and age-worthiness that is never exceeded.
