Vouette & Sorbée: The Full Lineup from the Cult Master of the Aube

Some Champagne producers are famous because their wines are polished, consistent, and easy to understand. Vouette et Sorbée is famous for almost the opposite reason. Bertrand Gautherot’s wines are alive, idiosyncratic, vinous, deeply tied to their soils, and absolutely unmistakable. They are not Champagnes designed to please everyone in the same way. They are Champagnes for people who want to taste farming, place, vintage, and personality.

Gautherot works in the Côte des Bar (also known as the Aube), Champagne’s far-southern, almost-Chablis corner, where the soils are rich in Kimmeridgian and Portlandian limestone. This is Pinot Noir country, historically treated by the big houses as a source of fruit rather than as a place of individual identity. But Gautherot helped change that. He was one of the growers who proved that the Aube could produce Champagnes every bit as serious, distinctive, and terroir-driven as those of the Marne.

Of course, farming is key. Vouette et Sorbée has long been one of the great biodynamic domaines in Champagne, and that is not incidental to the style. Gautherot’s goal has never been to make “natural Champagne” as a category. His goal has been to make the clearest possible expression of his vineyards. The grapes are harvested by hand, fermented with native yeasts, raised in wood, and bottled with no dosage. Nothing is there to smooth over the wine’s edges or obscure its origins.

Today’s offer gives a rare look across the range. Fidèle is the domaine’s emblematic Blanc de Noirs: pure Pinot Noir, vinous and savory, with red-fruited depth and the firm mineral backbone of the Côte des Bar. Blanc d’Argile is the Chardonnay, and perhaps the most Chablis-like wine in the lineup: salty, chalky, textural, and long. Saignée de Sorbée is the legendary rosé, a deep, intensely flavored Pinot Noir Champagne made by the saignée method, closer in spirit to great red Burgundy than to the pale, decorative rosé most people expect from Champagne.

And then there is Extrait. This is one of the rarest wines Gautherot makes: vintage-dated, Pinot-based, long-aged, and released in tiny quantities. The 2016 is not a bottle for casual popping. It is Champagne as a serious wine of the table — savory, structured, mature, and built for a large glass, a good meal, and real attention.

Vouette et Sorbée’s wines have become cult objects, and nobody should be surprised by that. They taste like they could not have come from anywhere else, or from anyone else. In a category that can sometimes feel shaped by luxury branding and house style, Gautherot reminds us that Champagne can still be radically agricultural: a farmer, a few hectares of living soil, and wines that speak with their own strange and beautiful voice.
