Taking over from his father Claude, Stรฉphane now farms 13.5 hectares across four villages near his base in Sury-en-Vaux, in the northern part of Sancerre.The domaine has been certified organic and biodynamic since 2017.
Trained in Burgundy, Stรฉphane is guided by the principle that individual vineyard sites, or lieux-dits, are inherently unique by virtue of their terroir. Each parcel is vinified separately and tended according to its specific needs. Plowing and plant cover between rows maintains soil balance while rigorous pruning and de-budding promotes air flow and proper maturation of fruit.
