2019 was Jacob's first harvest of his newly reclaimed vines in Augea, a village near Revermont in the southern part of the Jura. The parcel is 3.5 hectares total, with 0.60 ha planted to Poulsard.After harvest, the grapes are 80% destemmed, 20% whole cluster. Then racked once, and put into 500L or 600L demi-muids, with a few 228L barrels. The wine is aged for 10 to 11 months. The wine is bottled unfiltered and with no added SO2

Valentin took over a domaine his grandfather started and his father ran pesticide free, and began the conversion to biodynamics. They also have clay-limestone soils—perfect for Trousseau. The winemaking here is very gentle (manual harvests, no punchdowns, no added sulfur), which works perfectly to allow the depth of the terroir and the variety to shine, while preserving their natural lightness.
