Thierry and Sophie Chardon have farmed organically in the village of Couffy since 1996, converting fully by 2007. “Les Chardons” Blanc is their flagship white, made from Sauvignon Blanc grown on clay-limestone soils along the Cher River. The vineyard’s cool climate helps preserve vibrant acidity.

The 2022 vintage was direct-pressed and fermented with native yeasts in stainless steel. The result is dry, crisp, and varietally pure. A bright, refreshing Loire Sauvignon with classic pairing potential—from chèvre to shellfish.
