This is a striking Traditional Method wine that is all about an interplay between a broad texture and vibrant acidity and freshness. Intensely aromatic with notes that display both its fruity and earthy side. Honey and beeswax along with pear and a touch of creme anglaise. Subtle notes of just ripe forest berries, melon rind and prickly pear all ride a wave of tremendous acidity through the exceedingly long finish. The grapes, 70% Chardonnay and 30% Pinot Noir, were pressed using a traditional Champagne cycle and press cut. The wine proceeded through native primary and malolactic fermentation in barrel and wooden tanks. The final blend contains 6.5% reserve wine. No sulfur was used in the èlevage. No dosage.
