Patrick Piuze is not French, he's Canadian or Quebecois to be exact. He can put down cold beers with the best of them and prefers hockey to futból, but he is also one of the most passionate and knowledgable winemakers and a true devotee to his adopted home of Chablis.Patrick has spent several decades studying the intricacies of geology that lead to the many micro climates and terroirs that exist throughout the vineyards in Chablis. First with Jean-Marc Brocard and then when he founded his own, now highly regarded, negocient firm in 2008.From the beginning he sought out the top parcels and lieu-dits within both the 1er and Grand Crus but also the vast AOC Chablis region. He bottles his villages Chablis based on the specific parcels they come from in order to accentuate their unique terroir. In the cellar he eschews all corrections, additions and subtractions. Only small amounts of SO2 are used as needed.The wines are fermented and aged in a combination of tanks and neutral barrels. Patrick is obsessed with freshness and transparency, but also likes the added textural and tactile elements that oak aging can provide. Perhaps the most important part of his winemaking happens in the vineyards, where all the fruit is hand-picked and sorted prior to fermentation.
