Chablis is the motherland of crisp, unoaked and mineral-driven Chard. It's where it was invented. Chablis' chalky soils and cool climate make perfectly crisp, racy, white wine that tastes a little different than Chardonnay from anywhere else in the world, even the rest of Burgundy. One of the long standing "classic" producers of Chablis is the Domaine Louis-Michel. This family owned and operated estate has been producing Chablis for almost 200 years. The Domaine was the first in Chablis to make 100% stainless steel, oak-free wine (they thought it showed the grape and terroir flavors better). Today it is Guillaume Michel who is at the helm, and he farms and makes the wine in much the same way that it was done by his ancestors. Yes, some innovations have taken hold, but in the end the focus of the domaine is on pure, terroir driven wines.
