What is this wine?
Domaine Paul Pillot, under the talented Thierry Pillot, is one of Burgundy’s most acclaimed modern estates, producing whites of precision, finesse, and terroir clarity. La Romanée is a high-altitude, stony premier cru at the northern end of Chassagne-Montrachet, with limestone soils that yield taut, mineral-driven Chardonnay. The 2019 vintage was warm and generous, producing concentrated wines with both richness and vibrant acidity, offering superb aging potential.

What does this wine taste like?
Citrus zest, pear, and white peach with floral notes, hazelnut, and chalky minerality. Concentrated yet focused, with bright acidity and a long, saline finish.

Best 2024–2038. Decant if drinking young. Ideal with scallops, lobster, roast chicken, or alpine cheeses.

Thierry Pillot is killing it! He is a super-talented vigneron, and since he has taken over his family's domain the quality has gone through the roof. He is one of those rare characters who is equally good at making red and white wines.

They have 13 hectares of vines in the domaine, 1/3 red and 2/3 white. The whites are very concentrated because of the frost and the reds are supple and elegant, really classic. Like many young vignerons, Thierry has also set up a micro-negociant under his own name.

"The 2019 Chassagne-Montrachet 1er Cru La Romanée was showing beautifully, a touch of reduction dissipating in the glass, revealing notes of freshly baked bread, beeswax and nutmeg mingled with Anjour pear, preserved citrus, fresh melon and iodine. Medium to full-bodied, deep and tightly wound, with fine concentration, racy acids and a long, penetrating finish, this is broad-shouldered but tensile, auguring very well for its future evolution." -William Kelley

"From a parcel planted at the very top of the slope in thin soils by Thierry’s grandfather more than 70 years ago. This was fermented and aged in large oak (about 10% new) to produce a wine of prodigious concentration, with a concentrated citrus aroma and firm, flinty minerality on the nose that opens magically on the palate to show unexpected richness and density. Superb."
