La Petite Empreinte’s debut Saint-Bris cuvée, “Persévérance et Patience” 2022, is drawn from two tiny, organically farmed Sauvignon Blanc parcels—one on Kimmeridgian limestone (planted 1990) and the other on marl (planted 1959). Yields are low, around 28 hl/ha, and fruit is harvested by hand.

The wine is 25% whole-cluster carbonic macerated, 75% direct pressed, and fermented with native yeasts in neutral barrels. Aged two years in oak and six months in steel, it’s bottled unfined, unfiltered, with no sulfur. Flinty, lime-zipped, and texturally firm.
