Natural cider from one of the oldest active cider houses in the Basque Country's Goierri and Tolosaldea region. The Begiristain family has operated from the Iturriotz farmhouse in Ikaztegieta for four generations, with Iñaki Begiristain taking the helm in 1998. Made under the Euskal Sagardoa PDO using exclusively Basque apple varieties—fermented naturally without added yeast or sugar. This is the cider you drink at a sagardotegi: tart, rustic, alive. Pour it from height in the traditional txotx style to aerate.
