Hansy's goal is not to be a great distiller. It is to be the world's greatest distiller. And for anyone whose ever tasted his wares you may agree, he's not far from the mark.

To distill the essence of something is a lot harder than you might imagine. For starters, you need the absolute best version of that something, whether an apple, a raspberry, or even the lowly carrot. This ability to grow or source the best of the best is part of his secret. He farms the majority of his fruit biodynamically, not something to be thought of lightly.
