What is this wine?

Les Horées is the tiny, cult-favorite domaine founded in 2018 by Flavie Rodriguez, a Beaune-trained winemaker who previously worked at top estates including Domaine de Montille and Domaine Marquis d’Angerville. Based in Pommard, Rodriguez farms organically and biodynamically, vinifies with native yeasts, and uses minimal sulfur to highlight terroir purity.
The Côte de Beaune Blanc “Les Monsnières” 2023 is sourced from old-vine Chardonnay in Pommard, grown on clay-limestone soils with excellent drainage. Fermented spontaneously and aged in neutral oak, this cuvée shows the precision and quiet intensity that define all of Rodriguez’s wines.

Why get this wine?

This is a striking, mineral-driven white Burgundy from one of the Côte de Beaune’s most exciting young producers. “Les Monsnières” delivers the vibrancy and texture of top village-level whites, offering a glimpse into Flavie Rodriguez’s thoughtful, terroir-centric style. As with all Les Horées bottlings, production is tiny and highly allocated.

What does this wine taste like?

Fresh and focused, with lemon zest, green apple, white flowers, and wet stone. The palate is bright, saline, and chalky, with fine texture and a long, clean finish.

When should you drink this wine?

Delicious young for its tension and purity, but will gain depth over 3–6 years. Serve with shellfish, goat cheese, or simply roasted chicken.

Catharina Sadde was not originally planning to become a winemaker. She was studying gastronomy while working in restaurants in her native Dresden, Germany when she got bit by the wine bug. She did an internship with Schafer-Frohlich and then Domaine Chevrot in Burgundy, where she decided this was the region she really wanted to focus on.

After completing her degree in viticulture she returned to Burgundy and proceeded to put together a resumé that would make any aspiring winemaker green with envy. She worked at Domaine de la Romanée-Conti, Drouhin, de Vogüé and Marquis D’Angerville. All of these domains were pioneers in biodynamic farming and Catharina was convinced that this was how she wanted to work.

Her most recent gig was working alongside Cecile Trembley, another extraordinary talent, and while doing so she was offered a small parcel of vines. This offer was followed by a few more and once they had acquired about 1.3, she and her husband Guilhem made the leap and started their own winery.

As mentioned, Catharina is a fanatic for natural, biodynamic farming. They do everything in the vineyard by hand, and for now by themselves too. They settled on the name “Les Horées” because it refers to ancient Greek celebrations during the changing of seasons. Everything Catharina and Guilhem due is focused on nature.
