Deboutbertin works in the heart of the Loire Valley, a region where natural wine has flourished. When it comes to their natural wine philosophy, they’re not messing around. They start with organic farming, without the use of any machines (a horse helps out). Grapes undergo a long, slow press in an old-fashioned basket. It lasts around 24 hours. And then the grapes ferment in a barrel, sometimes for months. The winemakers listen to the barrel and only disturb it once it has gone quiet, signaling that the fermentations are finally complete. They then bottle the wine without sulfur.
