Olivier Horiot’s “Métisse” Brut Nature is a blend of Pinot Noir and Pinot Blanc from eight parcels in Les Riceys. The 2021-base cuvée includes reserve wine, is fermented in oak, and aged two years on lees before disgorgement with zero dosage.

Drawn from Kimmeridgian clay-limestone soils, it’s textured and mineral with bright citrus and savory depth. A precise, grower Champagne with layered complexity.
