Billaud-Simon is an old Chablis estate that produced many lovely wines but also had occasional misses. As Erwan Faiveley put it just before his family bought them out, "They have great terroir, but the wine-making is very so-so."
So the Faiveleys' first move after the acquisition was to install their own team to clean up the wine-making. They also wanted nervier Chablis and decided to move the harvesting date up from the domaine's typical practice.
