In the old days, collecting Chablis was easy. There were just two, maybe three, producers worth searching for. Now those two or three producers have become very expensive and hard to find. That's the bad news. The good news is that there is now a whole new crop of producers that are making wine that is just as good or at least awfully close. It is really these new producers that have given birth to Chablis' current "moment".A great example is Garnier & Fils, a wonderful newish producer (they've been bottling their own wines for around 20 years now; pretty young by Burgundian standards). Quite unusually for Chablis, Garnier takes a very natural approach to farming, and works all organically. Believe us, this is not an easy feat in the very marginal climate of Chablis.In Garnier's case, in fact, the climate is particularly marginal, as they specialize in the northerly corner of the AOC where the weather is the coldest. In this day of global climate change-- not to mention a greater preference for crisp wines of minerality and salinity -- these conditions suit Garnier perfectly.
