Named for the limestone rocks (cailloux) that cover its steep hillside, Les Caillerets is one of Chassagne-Montrachet's leading Premier Crus. Pillot's 0.4-hectare parcel holds 60-year-old vines rooted in impossibly thin topsoil over dense limestone marble bedrock—a quarry is visible nearby. The 2021 vintage's mineral intensity and taut structure are a perfect match for this rocky, well-drained site. The wine has focus, tension, and a stony persistence that marks serious Chassagne.

Thierry Pillot is killing it! He is a super-talented vigneron, and since he has taken over his family's domain the quality has gone through the roof. He is one of those rare characters who is equally good at making red and white wines.

They have 13 hectares of vines in the domaine, 1/3 red and 2/3 white. The whites are very concentrated because of the frost and the reds are supple and elegant, really classic. Like many young vignerons, Thierry has also set up a micro-negociant under his own name.

"Thierry Pillot grinned as we tasted his ’21 Caillerets: ‘I don’t feel the stress in 2021’. A nerve-racking vintage, to be sure, but he ended up delivering in spades. This wine is particularly successful, with bright lemony fruit, some aromatic floral notes, and a moderately strong smoky/reductive edge. The acidity is bright and lively but not acerbic, and the finish is long. It is produced from nearly a half-hectare at a high elevation in thin soils above 300 metres. This is top-class Chassagne in a fashionably racy style that will not disappoint."
