Retiree Michel Fallet and his wife run this tiny Cote des Blancs estate in Avize. Although unknown stateside, among the Champenoise Fallet-Prevostat is a greatly respected grower-producer. To visit there is to take step back in time. Viticulture is natural simply because that's how it's always been done; pressing is done in a traditional coquard press; fermentation and aging occur in 50+-year-old foudres from Alsace. Because of the family's disinterest in publicity and distribution it is nearly impossible to find a bottle to enjoy.
