Pascal Roblet of Roblet-Monnot farms biodynamically in Volnay, drawing on family roots dating back to the 1600s. “Nerthus” is his Bourgogne Aligoté, sourced from 35-year-old vines in the limestone-rich Côte de Nantoux in the Hautes-Côtes de Beaune. The blend includes 15% Chardonnay, adding texture and complexity.

Grapes are whole-cluster pressed and fermented with native yeasts, aged one year in barrel and six months in tank. The wine is dry, taut, and mineral-driven. A distinctive Aligoté that reflects Roblet’s detailed, hands-on approach.
