He considers his horse, which feeds on flora at the winery, to be part of his terroir.Or take his preparations. Most producers purchase theirs in the national or international marketplace. Benoit makes his entirely from materials he grows himself. That’s dedication! When it comes to the wines, Marguet follows a Burgundy-like hierarchy. He’s got multi-terroir blends. He’s got single vineyards expressions—his lieu dits. In between, he has a range of village Champagnes that showcase the special terroirs of his villages.He makes the wine using his extreme methods. He uses only old barrels, and allows the wines to naturally complete their malolactic fermentations. He uses virtually no sulphur, and no dosage.
