Domaine Goisot is, quite simply, one of the best sources for seriously delicious, terroir-transparent, honestly priced white Burgundy. They’ve been a staple of our collection since the early days, and with every new release, our faith in the magic that Jean-Hugues Goisot and his son Guilhem coax from the family's terroirs is simply reaffirmed.
Of course, it all starts in the vineyards. The Goisots are based in the Côte d’Auxerre, an obscure zone just southwest of Chablis, where they farm Chardonnay, Aligoté, and Sauvignon Blanc (bottled under the Saint-Bris appellation). Like Chablis, the soils here are rich in Kimmeridgian limestone, which gives the wines their signature salinity and mineral cut.
But unlike Chablis, the majority of their vineyards are north-facing which in an earlier time hindered growers from achieving full ripeness. But in the age of global warming, these cooler sites reveal wines with arresting tension and undeniable freshness.
One of the earliest adopters of biodynamic viticulture in Burgundy, the Goisots treat their “humble” terroirs with the same care and attention typically reserved for prestigious Côte d’Or Grand Crus. Harvest is entirely by hand. Everything is fermented and aged on the lees in stainless steel. Only the Chardonnay sees some time in 600L neutral oak demi-muids, adding a welcome touch of textural depth.
