Aurélien Laherte is at the forefront of Champagne’s grower-producer movement, crafting terroir-driven wines with an emphasis on biodiversity and minimal intervention. Based in Chavot, in the Côteaux Sud d’Épernay, the estate follows organic and biodynamic principles across its 10 hectares of vineyards. Les 7 is one of Laherte’s most distinctive bottlings—an homage to Champagne’s historical grape varieties. A field blend of all seven authorized grapes—Chardonnay, Pinot Noir, Meunier, Pinot Blanc, Arbanne, Petit Meslier, and Fromenteau (Pinot Gris)—this cuvée is sourced from a single parcel of massal-selected vines planted in 2003. Fermented with native yeasts and vinified in neutral oak, it is bottled with a low dosage to preserve its purity and energy.

This is a Champagne that defies convention, offering an intricate aromatic profile of orchard fruit, citrus blossoms, and white pepper, layered with hints of almonds, wild herbs, and saline minerality. The diverse blend creates a wine of remarkable texture and complexity, with a fine mousse and a taut, linear structure. On the palate, notes of green apple, quince, and preserved lemon unfold alongside chalky tension and a long, savory finish. The influence of old varieties like Arbanne and Petit Meslier brings an almost herbal edge, adding further depth to the wine’s expression.

With its vibrancy and unique composition, Les 7 is a versatile food pairing Champagne. It shines alongside delicate seafood dishes like scallop crudo or oysters but also complements richer, umami-driven plates such as mushroom risotto or aged Comté. All of his wines are aged in neutral barrels, do not go through malolactic fermentation and have just enough dosage to balance the wine and showcase the terroir.
