Jérôme Coessens has been working a single 3.4-hectare monopole vineyard called Largillier since 2006, tending old Pinot Noir vines in Ville-sur-Arce's clay-rich soils. This Brut Nature—no dosage added—shows chalk, citrus, and flinty minerality with great depth and freshness. Aged for 36 months on lees, it's a grower Champagne that tastes like the specific place it comes from, not a house style.
