Pehu-Simonet is a Grand Cru specialist, only bottling from his top sites and sells the rest off. The north facing Verzenay Grand Cru has chalk minerals that stand the village apart, but he also has tiny holdings in Bouzy and Mesnil. Applying techniques he learned in Burgundy back in the 1980s, he makes rich, Pinot Noir based Champagnes that -- like all the best Grower Champagnes -- don't taste like any other.
