Domaine Vacheron, a benchmark Sancerre estate, has farmed biodynamically since 2005. “Le Guigne Chèvres” 2023 comes from a north-facing slope of flint, limestone, and red clay—among the domaine’s most refined terroirs. The site brings taut structure and mineral complexity to their Sauvignon Blanc.

Grapes are hand-harvested, native-yeast fermented, and aged about 12 months in large Stockinger foudres. The wine is dry, structured, and saline, with citrus zest, herbal lift, and remarkable tension. A precise and ageworthy single-parcel Sancerre.

Vacheron is run by two cousins: Jean-Dominique and Jean-Laurent. They've pushed the quality in recent years, converting to biodynamic farming while adding to their portfolio of single-vineyard bottlings. Burgundy is clearly the model for these two, and their best wines operate on a Grand Cru-like level.

The main attractions are their single-vineyard cuvées, which showcase the patchwork of terroir surrounding the town of Sancerre itself. While these wines all posses fascinating differences, they share the Vacheron hallmarks of needle-point precision and an almost overwhelming expression of minerality. They are elegant and age-worthy.

To taste the single-vineyard cuvées of Domaine Vacheron is to experience Sancerre at its absolute apogee – perhaps that of Sauvignon Blanc, too. There are other great producers in the region (the cousins Cotat come to mind, for example), but none explore the fascinating variations of terroir so consistently and convincingly as Vacheron.

Antonio Galloni

"The 2023 Guigne-Chèvres is floral and fruity with elderflower, pear and apple freshness. It's gentle and round with excellent texture but does not have the concentration or sophistication of the 2022; however, it remains the smartest wine in the Vacheron Sauvignon range. Not yet bottled." -Rebecca Gibb MW
