The name Cauru—Sicilian for "hot"—captures the volcanic intensity retained in this wine's very structure. From two distinct crus on Mount Etna's northeast slopes, 85% Nerello Mascalese and 15% Nerello Cappuccio receive 24-hour cold soaking and seven days of maceration. Transparent ruby that dances between blackberry and cherry jam while dust and minerality underscore every note. Volcanic Nerello unadorned: sleek, creamy, with dusty tannins that whisper rather than shout.
