These aren't stodgy extracted Cabs and Chards of yesteryear that demand big hunks of meat or floods of butter and heavy cream. These are light, energetic wines that know how to move with the spice of a Baja fish taco and are down to take a bit of chill for a refreshing glass al fresco.

"I originally tasted the Reserve Cask as an unfinished, experimental sparkling that was hand-disgorged at the winery. For the first time in 2018, winemaker Michael Cruse separated off some of the yearโ€™s base wine into an oval vessel for longer aging. While the remainder of the base wine went into the 2018 Tradition sparkling, the Reserve Cask was bottled separately and aged on its lees for 26 months. The 2018 Reserve Cask is composed of 69% Chardonnay and 31% Pinot Noir. The base wine underwent full malolactic fermentation, and it was not dosed. Disgorged in September 2022, it has a pale gold color and opens slowly on the nose from matchstick to fuller tones of panna cotta, lemon peel and toast. The medium-bodied palate is dry and creamy, its savory flavors balanced by youthfully racy acidity, and it offers an expansive, creamy finish." -Erin Brooks
