A bourbon finished in Cabernet Sauvignon barrels—wine-country influence on a mountain-state whiskey. High West, founded in 2006 by biochemist David Perkins in Park City, Utah, was the first legally licensed distillery in the state since Prohibition. This Cask Collection release blends straight bourbons aged four to nine years, then finishes them for nine months in Cabernet Sauvignon wine barrels. The wine-barrel influence adds dark fruit and tannic complexity you won't find in standard bourbon. Bottled at 92 proof (46% ABV). Named Whisky Advocate's 'Distiller of the Year' in 2016.
