Binissalem, Mallorca. Grape: Giró Ros-one of the indigenous white varieties of Mallorca recovered at the beginning of the 21st century. When the grape reaches optimal phenolic maturity, the skin has a pinkish or grey coloration. Fermentated in 500L French oak barrels, 50% new with native yeasts.The wine is aged in the same 500L French oak barrels for eight months. Gentle lees stirring select days in January. Unfiltered, light bentonite fining. (VEGAN) Practicing Organic.

"The 2021 Ca Ses Rosetes is paler and feels less developed and younger than the 2022 that I tasted next to it. The year was less warm, and the wine has slightly lower alcohol and better freshness. It had a slightly longer élevage, seven months in 500-liter barrels. 3,600 bottles were filled from four barrels in May 2022." -Luis Gutiérrez
