Domaine Ilarria matters for its deep Basque roots and commitment to natural, organic viticulture on limestone-rich, terraced slopes at the foot of the Pyrénées in Irouléguy. The estate’s 7 hectares (35 % Tannat, 50 % Cabernet Franc, 15 % Cabernet Sauvignon) are farmed with minimal intervention, using native yeasts and light—or no—sulfites.

The 2024 Rosé blends Tannat and Cabernet Franc for structure and spice, pressing gently and fermenting (then aging) primarily in stainless steel on lees. The wine shows a vivid cherry-pink hue, zesty wild strawberry and citrus aromas, with savory mineral undertones and firm acidity—serious, food-friendly, and embodying a strong sense of place.
