Nicolas Rossignol is a fifth-generation Volnay grower known for biodynamic principles and precise vinification. His 2022 Mitans comes from 80-year-old vines on mid-slope clay-limestone soils, a site prized for its balance of finesse and depth. The vineyard sits at the heart of classic Volnay terroir.

The wine was fermented with 50% whole clusters over 16 days, then aged 17 months—first in barrel (25% new), then in stainless steel. It’s a structured, mineral-rich Pinot Noir with refined tension and aging potential. A benchmark Premier Cru from a standout site.

Left Sustainably Farmed

A 5th generation winemaker in his family, Nicolas Rossignol is a perfect example of how a newer generation of vintners in Burgundy have brought tradition and knowledge from the past into the future. To better understand vinification after his studies, he worked at various wineries you may have heard of such as Louis Latour, Vieux Telegraphe, and and Chateau Cardonne, as well as Domaine Boschendal in South Africa. He returned to Burgundy in 1994 and now produces exceptionally beautiful wines in Volnay and Pommard by balancing the elegance and power of all his different vineyards.
