Mas des Chimères farms organically on volcanic soils near Lac du Salagou in the Terrasses du Larzac. “Nuit Grave” is a Syrah-dominant blend with Grenache and Mourvèdre, harvested by parcel and fermented with native yeasts.

Aged for 12 months in neutral barrels, the 2020 is dark, earthy, and structured. A deep, mineral-driven Languedoc red with natural freshness and lift.
